VINIFICATION

Grapes are harvested at optimum ripeness; separate vatting is carried out between the different grape varieties to preserve the typicity of each, according to their terroir; pre-fermentation cold maceration to obtain primary aromas of red fruit and floral notes; followed by traditional long vatting in temperature-controlled vats to maintain fermentation (lasting between 18 and 25 days); final hot maceration for 3 to 5 days to reinforce the wine's body and structure; malolactic fermentation, which takes place after running off and softens the wines; aging in French and American oak barrels for 8 months.
